Electric salamander grills feature overhead grills which radiate heat from above rather than using direct or indirect heat from below as seen with griddles and chargrills.
Some models will also feature elements at the base of the grill for complete heat coverage. When conveniently placed at eye-level in the heart of the cooking area dishes can be quickly transferred and closely monitored without disrupting the flow of the kitchen during service.
